Half fill a small sauce pan with water and bring to a boil, add ramen noodles and simmer for 5 minutes. Rinse and drain the noodles and set aside.
Lightly toast the sesame seeds in a small dry skillet over high heat. Remove the seeds from the pan and set aside.
Heat the olive oil in a wok over medium high heat, add the shallots and stir fry to about 2 minutes. Add the chicken, vegetables noodles, sesame seeds and sesame oil to the shallots and heat through and serve.
