Directions
Pour half can of tomatoes into bottom of slow cooker, spread evenly Add half of the sliced peppers and onions and garlic Add chicken breasts Whisk together seasons and sprinkle over chicken evenly. Flip chicken and sprinkle bottom half Top chicken with rest of tomatoes Add rest of onions and peppers Cover and cook on HIGH FOR 3-4 hours and on LOW for 6-8 Remove chicken and cut into strips Ladle out one cup of broth and discard In a small bowl whisk together the lime juice and honey and add to slow cooker along with chicken. Season to taste. Serve with tortillas, guacamole, sour cream, salsa, etc.
