Cut potatoes into 5 mm cubes. Heat 10 ml of extra virgin olive oil in a medium sized skillet over medium heat. Add potatoes and saute until just beginning to brown. Add onion and garlic and saute for 5 more minutes. Put potatoes in serving dish and keep warm in the oven. Crack eggs into a small bowl, add cream, salt and pepper, whisk to blend and set aside. In the same skillet add crumbled sausage and cook until almost done. Push sausage to the side of the pan, add egg mixture and scramble eggs, fold sausage into scrambled eggs. Spoon eggs and sausage over the top of the potatoes and top with 20 g shredded cheese.
