null Melt butter in cast iron, add garlic, carrots, onion, spice to taste and let simmer on medium heat until soft/mushy. Add almond milk and Let cool, blend in food processor. Add dollop of sour cream or plain Greek yogurt and chives to top if you want.

Ingredients:
  • 3.0 cups carrots (organic, about 2-3 big hand fulls)
  • 0.5 medium Onion
  • 1.0 tbs black pepper (ground)
  • 2.0 tbs ginger (ground)
  • 0.5 clove garlic
  • 0.25 cup Butter
  • 2.0 cup Almond milk unsweetened
