Directions:
In a soup kettle, combine first nine ingredients & bring to a boil. Reduce heat, cover, and simmer for 15 - 20 min(until potatoes are tender). As soup is simmering, take a large skillet and cook ground beef and mushrooms in butter over medium heat. Drain when done. Add beef and mushrooms to soup. Stir in 4 C. of milk and heat through. In a small bowl, combine flour and 1C. milk. Whisk until smooth and gradually stir into soup. Bring soup to a boil & stir for 2 min. Reduce heat; stir in cubes of Velveeta until melted.

  • 6.0 Medium Potatoes (cubed)
  • 1.0 Medium Carrot (grated)
  • 1.0 Medium Onion (chopped )
  • 0.5 Cup Green Bell Pepper (chopped)
  • 2.0 Tbsp Jalapeno Peppers (seeded & chopped )
  • 3.0 Cups Water
  • 8.0 tsp Beef Bouillon
  • 2.0 cloves Garlic
  • 0.125 tsp Black Pepper
  • 2.0 lbs Hamburger
  • 0.5 lbs Mushrooms (fresh and sliced )
  • 2.0 tbsp Butter
  • 5.0 cups Milk
  • 6.0 tbsp Flour
  • 16.0 oz Velveeta (cubed)
