Place chicken between 2 pieces of cling wrap and using the smooth side of a meat mallet pound chicken to even thickness. Place chicken skin side down on work surface. Sprinkle sage leaves over chicken. Put cheese on top of chicken. Top cheese with prosciutto sliced Tightly roll up chicken. Roll chicken in all purpose flour. Dip in egg wash. Coat with bread crumbs. Heat deep fryer to 180℃ Deep fry until browned (3 - 4 minutes) Transfer to a baking tray. Cook in oven preheated to 160℃ for 20 minutes.
